We served this beautiful cocktail at a special Mother's Day High Tea at Terrara House. The butterfly pea adds a special magic, as it changes from purple to blue when added to the gin and is also delicious!
30ml Gin (we used Citrus Gin from Old Salt Distillery)
15ml Lemon Juice
60ml Butterfly Pea Tea (Chilled)
Tonic Water
Butterfly Pea Flowers
Large Ice Cube Mould
Glass Jug or Teapot for brewing tea
Juicer
Old Fashioned Glass
Stirrer
Prepare ice cubes by adding a Butterfly Pea flower to water in a large ice cube mould.
Brew Butterfly Pea tea - Infuse 1 teaspoon of flowers to 1 cup of boiling water. Allow to infuse for 3 -5 minutes and strain. Refrigerate to cool.
Add the ice cubes to a tumbler, then add the gin, lemon juice and tonic water to 3/4 full. Give it a little swirl.
Top with the butterly pea tea and watch it change colour!
